I can’t seem to successfully make anything that uses stew meat. I’ve tried probably 5 different recipes and each time I strike out. The meat is edible, but not great. It’s tough and stringy and not tasty. I can’t figure out what I’m doing wrong.
So I found this recipe for a hamburger veggie soup, which totally reminds me of a beef stew, which is a dish that I’d love to master. But you know, have yet to be unable to. Sad day.
But I loved this one. It was good the first day, but fabulous as leftovers! Couldn’t be easier to prepare since it just uses ground beef instead of stew meat. I was a little nervous because it called for cabbage. I was going to exclude it, but then I thought – nah, I need to keep it in there. Just to try it. Adore it! It didn’t take over the soup, but added a nice texture to it. I also really appreciate that there aren’t any weird ingredients in there (With the exception of the cabbage), which means it takes ingredients that I’m likely to have on hand AND the ingredients are inexpensive, making this a pretty cheap meal! This is definitely going on the keeper list.
I served it with a ham & cheese panini. Delish!
Hamburger Vegetable Soup
Slightly Adapted from Money Saving Mom
(I basically cut the recipe in half and used red potatoes and white rice since that’s what I had on hand.)
Ingredients:
1 lbs. ground beef
1 cup chopped onion
1 cups peeled and diced potato (I left the skin on, but you could remove)
1 cups sliced carrots
1 cups shredded cabbage
2 (14.5-oz) cans diced tomatoes
1/4 cup rice, uncooked (white or brown rice is fine)
5 cups water (could use less, but this the amount I used)
3/4 Tablespoons salt
1/4 teaspoon basil
1/4 teaspoon thyme
1 bay leaf
Directions:
1) Brown ground beef and onion together until meat is lightly browned. Drain off excess fat.
2) Add all remaining ingredients and bring mixture to a boil.
3) Cover and simmer for two to four hours.
4) Check periodically and add more water, if needed.
5) Remove bay leaf and serve.
This recipe IS a great one! Must be an oldie but goodie…I collected this same recipe from my Grandma a long time back. I haven’t made it in a while…now I will be craving it ’till I do! Yum!
