Day #18: Breakfast for Dinner
We’re not a “breakfast for dinner” family. Might be a thing that we do when kids are older and the novelty of pancakes at nighttime is at a premium. We aren’t there yet. But the other day I made a ham, broccoli and cheese strata and we had it for dinner. OH SO TASTY! Would definitely make it again. And again.
Ham And Broccoli Strata
Found on Challenge Dairy, but I cut their recipe in 1/2 and made in an 8×8 dish and made just a few modifications. Got 4 very hungry adult servings out of it.
8 ounces broccoli, steamed & chopped
2 Tablespoons olive oil
1/4 teaspoon red pepper
1 medium sweet white onion, quartered and thinly sliced
1 clove garlic, minced
1/2 sweet red pepper, diced
3 large eggs
2 Tablespoons prepared spicy brown mustard
1/4 teaspoon black pepper
1 1/2 cups milk
1 cup diced fully cooked ham
8 oz. shredded sharp cheddar cheese
1/2 loaf French bread, cut in ½-inch cubes
Heat olive oil in skillet over medium heat. Add ground red pepper and sauté onion, garlic and red bell pepper.
In a bowl, beat the eggs and combine with mustard and black pepper then mix in milk.
Place half of the bread cubes in a well buttered 8×8 inch baking dish. Add layers of half the amounts of the onion mixture, broccoli, ham and cheese.
Add second layer of bread cubes and pour half of the egg mixture over the layers. Repeat layers with remaining onion mixture, broccoli, ham and cheese.
Pour the remaining egg mixture over the assembled layers.
Cover and refrigerate at least 6 hours or overnight.
Bake uncovered at 350°F for 50 to 60 minutes or until the top is golden brown and bubbly.
