Another atypical week for us, but getting more normal.
Summer’s here for Jeff’s band, so that means no more going to Columbus, NE each Monday night. Although, we’re going into Columbus this Thursday because it’s Jeff’s band’s turn to play at Lawn Chairs on the Square – it’s kind of an open grassy part of downtown, but this Thursday, there will be live Jazz music!
Here’s the plan for this week:
Monday – Baked Ravioli. A new one for me. Should turn out pretty well since the recipe is simple enough. The question will be: do I like it as much as some of the other Italian food I make? Will it be good enough to stay in the rotation? I just got done making it (will just need to pop it in the oven tomorrow night) and it made my kitchen smell wonderful. That’s a good sign.
Tuesday – No cooking for me! Leftover night! By this point, we’ll have the following leftovers: Baked Ravioli (if any good), Chicken enchiladas and 1/2 an Applebees Fiesta Lime Chicken.
Wednesday – Quiche! I have some odds and ends to use up – namely 1 big slice of ham that’s not quite enough for a quiche on it’s own. So, we’ll do ham, chicken, onion, broccoli with swiss and cheddar cheeses. Delish!
Thursday – No cooking for me! Because of Jeff’s concert (which is 90 minutes away and starts at 6:00 p.m.), we’ll probably eat on the road. Or there at the event (I think they have street vendors selling all kinds of goodies!)
Friday – Pizza casserole! Last time I made this, I saved half of it and froze it. I’m desperate for the freezer space (chicken was on sale this past week, so I stocked up!), so it’s time to bake it up.
Saturday – Beef Stir Fry (if needed). We might have too many leftovers at this point, so this might get bumped to next week. We’ll see when we get there. This might be a busy day – Jeff & I are babysitting our new niece, Capri, while my sister and family head to Worlds of Fun!
Sunday – This is Father’s Day! Not sure what our plans are for this day, but I probably won’t be cooking!
