Here are some recipes I’ve tried lately and that I actually recommend.
Coming up this next week in our household is Beef Fajita Nachos. Took me a while to find the canned chipotle peppers, but trust our local Bag N Save to have them!
Stuff I’ve actually made:
Chicken Spaghetti
This is for 4-5 servings. I’ve been halving the recipe and cooking it in a bread loaf pan. Works great! I get a dinner for both of us out of it and then 1-2 more lunches for me!
1 pound Boneless, Skinless Chicken Breasts, browned and cut into bite size pieces
1/2 pounds Thin Spaghetti Pasta, Cooked Until Just Al Dente
1/4 cups Butter
1 whole Large Onion, Diced
4 cloves Fresh Garlic, Minced
1 can Cream Of Mushroom Soup (10 Ounce Can, Do Not Dilute)
1 block Cream Cheese (8 Oz.) Cubed
1/4 cups Parmesan Cheese, Grated
1/2 cups Italian Bread Crumbs
Preparation Instructions
Preheat Oven to 350.
Cook pasta until just barely done (al dente). I like to cook mine in pieces – just taking the pieces of spaghetti and breaking them into 2-3 pieces each. You can leave them whole though.
While pasta is cooking, saute onion, celery and garlic in butter until just soft.
Add the soup and cream cheese over low heat and stir until smooth.
Add diced chicken to mixture and mix in.
Add spaghetti to the mixture.
Mix well.
Combine into a sprayed 9×9 baking pan. Sprinkle with parmesan cheese and bread crumbs.
Bake 45-60 minutes.
Popcorn Cake
Think of it as a giant popcorn ball made with M&Ms. I did this for our Super Bowl Party, so I made 2 half-batches. In one half, I did the Steelers colors. In the other half, I did the Packers colors. Kind of fun. Could easy get red M&Ms for a Husker one in the fall. (Hint, hint: buy your M&Ms now during the post-Valentine’s Day sales and freeze them. As if M&Ms would last in my freezer for 7 months!!!!)
Ingredients:
4 quarts popped popcorn
1 pound candy-coated chocolate pieces
1 cup peanuts
1/3 cup vegetable oil
1/2 cup butter
1 pound marshmallows
Directions:
1. Mix popcorn, M&Ms, and peanuts in large bowl.
2. Heat oil, butter, and marshmallows in pan until melted. Pour over popcorn and blend together with heavy spoon or hands.
3. Spray Bundt cake pan with vegetable spray. Press mixture lightly into pan and refrigerate until cool.
4. To remove cake from pan, put pan in warm water, then turn upside down until cake comes out
